Principal Function:

This position is responsible for overseeing the preparation and execution of service of all food items in the stadium. Works with the Executive Chef to ensure that high quality work standards are being met and food is being prepared to recipe standards. Trains kitchen staff on cooking techniques, new recipes and procedures. During the course of the season will develop and standardize seasonal items to add to the menus.

Essential Responsibilities

Required:

Give direction to all employees involved in preparing and cleaning of the food production area.

Responsible for monitoring the appropriate use of resources, and minimizing wastes.

Establish production/distribution forecasts based on attendance, business forecasts, previous experience and other variables.

Responsible for maintaining the cleanliness and order of the kitchen, walk-ins and storage spaces.

Enforce food quality standards and adherence to recipe books.

Enforce food safety compliance as required by ServSafe and all applicable health and safety regulations.

Ensure prep lists are written and followed leading up to events.

Ensure that all tools, products, etc are available to complete prep and service requirements.

Maintain a positive work environment, keeping cooks on task and working efficiently.

Review suites orders and BEO's and organize production lists, labels, etc.

Monitor business levels to ensure appropriate production levels.

Organize finished products for efficient pick-up and distribution to various locations.

Perform administrative tasks including, but not limited to: event recaps, inventory counts, filling order sheets.

Provide training, guidance, reviews and performance management to all kitchen employees.

Communicate any issues or opportunities for improvement to the Executive Chef as they arise.

Work with front of house managers to ensure the timely service of all food items and cooperation between departments.

Make critical decisions as necessary.

Maintain effective communication with the Executive Chef

Other duties as required.

Qualifications/Skills:

Must have journeyman's papers or equivalent and Food Safe Certificate.

Must have previous supervisory experience.

Must have experience working in a large volume kitchen in a 4 star hotel or similar, preferably having experience in a stadium, or operation with multiple outlets.

Must be able to execute high volumes of food service while maintaining high standards.

Must be able to perform work efficiently and consistently in a high pressure environment.

Must be available to work all major events.

Must be able to give and receive direction and carry out tasks to standards set by the Executive Chef.

Must be highly organized, have strong multi-tasking skills and be self-disciplined.

While performing the duties of this job, an employee is regularly required to stand, use hands to finger, handle, feel, reach with hands and arms, and taste or smell

The employee is occasionally required to stoop, kneel, or crouch

The employee must regularly lift and/or move up to 50 pounds, and carry approximately 20 feet

Ability to physically walk approximately one-fourth () of a mile and the circumference of the unit several times a day

Specific vision abilities required by this job include close vision, color vision, depth perception, and ability to adjust focus

While performing duties of this job, the associate is frequently exposed to moving mechanical parts and extreme heat

Employee must be able to perform repetitive motions

The employee is occasionally exposed to wet and/or humid conditions and extreme cold

Employee must be able to work in a cold environment such as when cleaning walk-in refrigerators

The noise level is usually moderate to high

The employee frequently has hands in soapy water and/or cleaning and sanitizing chemicals

Employee must have ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions

Employee must be able to operate in an environment with moderate noise

Employee must have the ability to walk with non-skid shoes at all times.
